Taste the Mediterranean: Regional Cooking and Wine
As a follow-up to last year’s successful course, nationally acclaimed chef Chris Maher will lead a hands-on culinary tour around the Mediterranean. You will learn how the different foods from each country relate to one another and how they ultimately influence the foods of the new world, Europe and the Americas. Along with technique and theory, you will learn more about flavors, ingredients and recipes from several Mediterranean countries and a brief overview of the history and cultures surrounding foods from the region. In addition, there will be an in-depth discussion and tasting of wines paired with the foods we will be creating together. You and your classmates will enjoy the Mahers’ home as you prepare food in their professional indoor/outdoor kitchen overlooking the Taos Mountains. A field trip to the Taos Farmers Market is sure to be a highlight. No prior experience in the kitchen is necessary. Experienced cooks will learn as much as they desire from working directly with the chef.
